A second vote for cutco, I probably skinned 10 deer before sending back to sharpen.

I've used a bunch of knives through the years for cleaning/skinning deer. Although I've got a Havalon, I find myself usually turning to one of two knives.
The Cold Steel "Roach Belly." I really hate the name, but like the knife,. Can usually be found online for aprox $15.

Hen and Rooster "Skinner" (or something like that). Normally costs about $35.

I've got a number of nice folding blade knives, but I now prefer the like the ease of cleaning a fixed blade knife. The Havalon is good if confined to skinning. If you open the chest cavity (like I frequently do), you'll need to use something else.

Kitchen knife, razor blade and a sawzaw to chunk up the left overs for a trash bag works for me.

I am pretty old school, and like the case sodbuster and sodbuster jr....nothing fancy at all, but durable as can be and have a fine drop-point blade design...

you can by both the sodbuster and the JR for about a hundred bucks....
