That's it. One thing I was looking for was ease of working the gun. It was the smoothest and easiest of any I looked at which ranged from glock, ruger, kahr, sig, etc...

The reason it's so easy to rack is that the hammer acts as a second recoil spring since it slows down the slide. This allows them to use a lighter recoil spring and makes racking it very simple if you retract the hammer first.

My suggestion is the Kahr CW380. It is an excellent value. But this is only if you plan to stick with 380.

Look at the Colt Mustang and the Sig P238 and P938

The p938 is a 9mm

It's good that you're looking out for your wife. Having said that, the best chance you have of a new gun working out for HER, you need to make sure the gun she ends up w/ is HER selection. Point her generally in the best direction, but let her make the final decision.

My personal thoughts on the 380 and the SA 1911 type handguns for cc:
1. I cc the 380 ACP only when I circumstances prevent me from carrying a more potent self defense round. Although I don't personally want to get shot w/ a 380, I'm more comfortable w/ at least a 9mm for self defense.
2.How is she going to carry this gun? If it's going to be in a purse or on her person (but not in a pocket), she can just as easily carry a slightly bigger gun yet have it chambered in 9mm.
3. Although I really like the 1911 (and have two that are in my cc rotation), I'm not fan of 1911's chambered in 380 ACP. Again, I view the 380 ACP as a pocket gun. Having said that, I want my pocket gun to be easy to draw and manipulate. The "pocket 1911's" have more surfaces to snag (cocked hammer, external safety, beavertail, etc) during the draw compared to a gun like the CW380. I also don't want my pocket gun to have a safety to have to manipulate.
4. Although the 1911 is a fine defensive handgun, it's manual of arms requires more training than DAO or striker fired guns. Is she ready to spend the extra time training that's needed?

If you think a 380 best suits her needs. I'd go more the route of something like the CW380, a DAO gun w/o an external safety and minimum controls.
