IMHO, S30V steel is the best steel for that purpose but will strawberry rust if you let it sit wet for awhile or don't take care of it. After that AUS8. Easy to sharpen gets a razors edge and doesn't rust and is affordable.
Anything steel that has CPM in the name takes a diamond to sharpen.

Cold steel master hunter carbon v on my side and a eye brand sodbuster jr in my pocket,, I only carry carbon blades.

Two of my favorite fixed blade knives for general use, including skinning deer and hogs, are the "Roach Belly" (I REALLY hate that name) from Cold Steel
and the.
"Classic Hunter" from Kissing Cranes
