What size overflow pipe should I use.

Overflow will be installed at red line. Not the ideal location but already have that area of the damn opened up due to washout.

Pond is ~1.6 acres.

Mine is 875ish by 175ish. 10 or 12 inch overflow.

It has overflowed one time in the last 20 years.

Is it sloped heavily going into the pond, or is it really gradual over a long area?

No...pond side slope is much less than the backside of the damn. Nice easy slope, much easier than the backside of the damn. I don't know exact slope but I can comfortably ride an ATV on the pond side of the damn when the water is low.

How large is the watershed draining to the pond? The size of the pond really doesn't matter, as it is going to be almost full most of the time most likely. What you have to figure out is if you get a 6" rain, is 6" of rain on 2 acres draining to the pond (and overflow) or is 6" of rain on 15 acres draining that way? That's gonna determine if you need a small pipe, big pipe, or a big arse mother frickin pipe.

Also how much higher is your levy from your water level.

Q=CiA

Flow=impervious factor * rainfall intensity * drainage area

Depends on how bad of a storm and as mentioned how much area drains to your pond

18" should prolly do it though...

We put a 24" pipe in ours with a gate valve so we can fill our duck hunting area in the wintertime. We have about 120 acres of watershed so we also put in a concrete emergency spillway.

In this picture you can see the handle for the gate valve.

I'd say watershed is about 10-15 acres. Watershed is split and enters pond from the northeast and northwest corners of the pond (top right and top left in the pic).

Our ideal water level is about 24 inches from the top of the levee.

Our pond at camp is about 1 acre and we use a 6" pipe. It flows fine but probably should be larger diameter because with heavy rain fall the water seeps around the dam and even when it doesnt the flow pipe spills for several days putting lots of pressure on a dam that is visited and ravaged by beavers often
