Have you ever eaten grass carp?

I am involved in a bet with a fellow friend/poster that will lead to one of us having to eat a carp caught by the other in Lake Ramsey. We haven't discussed who will choose how it is prepared. A quick google search tells me some people actually smoke it. Anyone ever tried it?

Billy Joe Cross was a friend of my family for many years. We were in some hunting clubs together. He had a line of cookbooks called Cooking Wild Game and Fish Mississippi Style.

He died just a month or so ago. I'm not sure if his recipes are available online or not. He used to smoke carp all the time and serve it as appetizers, in "carp cakes" like crab cakes, in cracker dip, etc. It was delicious.

I gave some to a few people about 15 years ago.... they said they were fine.. .just like regular carp.....

I have absolutely zero evidence to back this up, but I've heard people whisper that these buffalo filets some people sell are actually grass carp.

If true I can't really complain, as they're delicious, but that is the word on the street.

They are eatable. Up in the midwest along the MS river they take them and clean them where the meat is scored then fried. The bones dissolve while being fried.

It's far from the best fish I've ever eaten but it's our good luck charm eating before deer hunting up in IL every year, it hasn't killed me yet.
