I just sold an 18' GT cc because I moved out of LA. Main reason we got it over glass was to have one boat for hunting and fishing.
My favorite things about the boat...hydroturf, catwalks like the other boat already posted, rod holders I installed on the sides of the console and under the catwalks, and the Lowrance gps/depth finder. The catwalks are a huge upgrade in one of these mud boats.
Oh, and get a Cajun anchor.

I've never been in a boat with catwalks so I can't speak to them. Trolling motor is a must, the best thing you can get is the quick release bracket.
I have the center console and it's not going to win any races or get through the most mud, but it beats holding the big vibrator for long runs.
I really like having a power pole, but I often wish there was a way to quickly release it, mainly for frogging as it can take a beating from the trees
