Dexter-Russel or Victorinox for fixed. You won't see any guys working in a fish market using anything else.

All the charter boats use Dexter Russell for a reason. Here is 8" on amazon for 13 bucks. (My favorite size)

Dont waste your moneyon a bubba blade. Its a mediocre blade with a fancy handle. Go with dexter as others have said.

I've got an american angler electric that I've been very happy with. Have had for 2+ years and have cleaned hundreds if not thousands of trout. Dont use your electric on redfish and you'll see it last significantly longer. A large bread knife works best.

How are these things? We sell them a BPS and the video makes them look amazing? Can they clean a black drum or a sheephead? I know a fellow who modified a reciprocating saw just to clean the former.

ETA: saw some rather unflattering comments on the Bubba.

Do you want to spend a bunch of money on a nice knife without going completely broke? Then buy a Grohmann

Do you want to spend a bunch of money on a very shitty knife? Buy a bubba.

Do you just want a simple and workable cleaning knife that will last a long time and take a good hone with a few swipes on a steel? Buy a Dexter.


Rock hard steel has it's place, but it's not in a filet or boning knife. You want a nice steel that will hone easily and when it comes time to be sharpened you don't have to track down a stone or wheel.

Titanium bonding? I don't know about all that. The handle looks cool though and they aren't stupidly priced. 4116 is pretty good steel but I'm not sure why they felt the need to mess with it's hardness. It gets really shiny too, which is cool if you are into shiny knives.

Anything that makes the steel too hard is bad for a working blade. If the steel is too hard it's a bitch to hone and even more of a bitch to sharpen. It may hold it's factory edge longer but is it really worth the trouble of having the extra hardness?

there is no reason to even consider anything else
its cheap, durable, easy to resharpen
