Double jig rigs - when to use?

Whether it's trout or The White Perch, what makes one decide to use a double vs single jig rig?

when the birds are diving and you're getting a spec on every cast, go double and get two every cast.

Only when the bite is insane. But I usually dont have that rigged up already. And when the bite is insane I dont want to waste time to set up a double rig.
So, pretty much very rarely.

I recently started rigging up my jig setup with a swivel, then 12" of leader material to a jig. I carry a jig on an 18" leader with a quick connect on the end and snap it in the swivel if I want to go to double rig. Single rig to a double in just a few seconds.
ETA: I'll use that setup when trolling in my kayak or a place I know where schools will be present, under birds or lights at night, two fish at a time is fun. I've even used it while bumping on the bottom for flouder with gulp.

For trout, I always have one ready to go. I start off with different colors and if I see them hitting the same one over and over I know what is working and swap to that color. I use a lighter head one on the top rig as well. My grandfather used to take me surf fishing at Grand Isle every summer and that's all we threw with sparkle beatles and filled up a bream basket every morning and evening. That is how I was taught so that is what I do.

Flounder only when inshore. Ill buy the old school spec rigs, cut off jigs and replace with two 1/4 lead heads and curly tail gulps.

I fish a double rig 90% of the time i'm fishing plastic. I like have two different colors and the presentation of swimming bait that a double rig gives you. Only exception is winter fishing when the bite is slow I throw a single.

Besides the 2 on every cast instances, we use them to get the bait to the bottom quicker in strong current.
