Handles. I usually just quarter my deer nowadays, but when we used to keep a whole side of the deer we always cut a slit between to ribs to give you a place to grab them for hanging them up in the cooler.

Its pretty clear there were some time saving tricks employed, but impressive with a blade none the less.

Stabbing the hams would piss me off though.

Gutting deer is for the birds. I can skin and debone a whole deer while hanging and not gut it in about 10 minutes. I can even get the tenderloins out. I'll never gut another deer.

I only gut mine when I'm hunting at our place where we have a big walk in to age it for a few days to a week.
