What do you use? Is there an advantage to carbon vs stainless?

I'm sure there are folks way more knowledgable about knives than me but I use a standard buck knife with a guy hook.

BIL bought me a set that has a 3 different knives in it. Gut hook, capeing knife, and another big blade.

I like to keep it simple. It only takes a few minutes anyway

I like carbon. I use cold steel carbon v and eye brand sodbusters. To me they are easier to sharpen and hold an edge better than SS and other metels

Havalon piranta knife. It is the one with changeable blades that are as sharp as scalpels. Cuts through deer and hogs like butter.

Dexter Russell beaver knife. Carbon steel, easy to get sharp enough to shave with.

My current knife The orange handle makes it easier to find when I set it down while skinning.

Never used a gut hook until last year. It grew on me real quick like.

Nice choice, SS. I keep one like that in my truck at all times. Used it one year to help clean a couple deer before needed to be sharpened some. It's refreshing now days to find a knife that does it's job and only costs $15.

I've used a number of both fixed blade and folding knives through the years, but now I seem to almost always find a fixed blade knife in my hand when it come time to skin a deer. I tend to traditional, simple, inexpensive knives. Spend more time seeing how the knife handles in hands than worrying about eh type of steel. In addition the the Mora mentioned above, here are two of my favorites.
Cold Steel "Roach Belly." A knife that's just as useful as it's name is bad. Handy for skinning deer or squirrels. It can usually be found new for about $15.

This knife from "Kissing Cranes" costs about $35. It's just as useful as the "Roach Belly."
