I just had some done by Kens in Raceland. The best I have had.

I had a processor, who is now out of business, let a whole deer rot in their freezer. A closed ice chest insulates the contents from the outside, so after a week, the ice was gone and the deer left to rot. (Pre-yeti period of history)

Good people, sausage isn't bad.

One day at work we had Bergeron's, someone's homemade, Tramonte's Catoires', and Terry Sanders all together, and they ranked as listed. Bergeron's is the best I've had so far, the texture is just right and it holds up really well when cooking.

Tee-Wayne's in Gonzales/Duplessis area had really good pork sausage, so I can only imagine his deer will be very good also.

I just picked my deer meat up from the processor yesterday. All the meat was professionally sealed and packed in labeled boxes, and they gave me back my ice chest. I get home to put everything up, and open my ice chest to discover what could only be described as Satan's wife's heavy flow has been left in my ice chest the last 3 weeks.

Apparently they processed the deer, but never thought to pour out the last gallon of blood water left in my ice chest or rinse it out.



For what it's worth, the sausage came out great.

Had some deer blood spill on my backseats of a company car once. Smelled like i had a body in the trunk like on goodfellas.

Took to a detailer and they ozoned it over and over. He told me i needed new seats

Turned in the car the next month still stinkin somethin awful
