Natural pork casing.

Filled with cooked rice, finely ground peppers onions and seasoning, finely ground organ meats.

If done right, it tastes like you gave a Cajun a hunk of patee to season.

If done wrong, it can be: too much rice, too mushy, too much meat, too much liver, wrong kind of liver, over spiced, under seasoned... Just crap.


Once a year I make a big pot of boudin stuffing. Basically a dirty rice dressing with a little extra chicken liver and served wetter.

We also occasionally eliminate the rice and melt the ingredients into queso.

You haven't lived until you've had boudin dip.

My wife's 93 year old grandma had it for the first time at the camp a few months ago and she hobbled over and kissed me at the card table. It's that good.

Sorry about that....Plaquemines is the parish. Supposedly though, some place called Jamisons (I think) mkaes some good boudin down there. Never had it though.

Duckroost has some damn good boudin and boudin balls, along with lots of other good food to choose from

I Like the smoked boudin from best stop, never had Kartchners. Locally that place on Greenwell springs isn't bad and I like that it almost always taste a little different, I don't think they measure anything.

Every time I visit my relatives in Lafayette, Carencro and Beaux Bridge, my favorite boudin stop has been Don's. The boudin has always been very consistent, not too spicy. I've also tried Poches and it was okay, but didn't really stand out.

Boudin by Jamison and it's not even close. Look him up on FB, he delivers in Abita and Gretna.
