Backstrap BBQ pit recipe

Going to throw some backstrap on the pit this afternoon and want to try something different but relatively simple. What y'all got?

Tenderize, olive oil, salt and pepper. Rare

What Natty said - I drizzle a little orange marmalade on mine as soon as it comes off the pit.

Butterfly.
Mince onion with bbq rub and smear inside. Roll up. Tie. Pat dry. Let sit in the fridge for 30 with no cover.
Coat in rub.
Spritz with bourbon while cooking. Cook slow and slightly longer.
I make this for barbacoa tacos with cabbage and lime.

Butterfly. Stuff with onion and banana peppers, season to your taste. Fold back to normal. Season outside, wrap in bacon, put toothpicks or cooking twine to secure the bacon on the backstrap. Throw it on the grill. Once that bacon is good that backstrap should be just about right.

Stuffed some with peppers and cream cheese and wrapped with bacon.
The others I seasoned with garlic powder, salt and pepper.
Complimented with baby back ribs, green onion deer sausage and Cajun deer sausage and chicken

Looks good. Just be careful not to cook it too much (I'm certain you already know that).

As long as we don't drink too much haha.

Great outdoors stainless grill. Probably from lows. My Pow pow gave it to me a few years ago for pressure washing his drive way

Next time cook that thing the same way except make a BlackBerry and red wine reduction to drizzle over it

This is a little more prep work, but worth it.
Cook up some Italian sausage and chop it up. Mix it with some jalapeños and some cream cheese. cut backstrap about 2-3 inches wide strips. Stuff the mix in and roll it up. Stick a toothpick to hold it. You need to precook bacon a little. Wrap it with the pre cooked bacon then put on pit.
