Best trip I've ever been on was catching bones in Exuma. I would love to catch a tarpon on the fly.

You can catch 150 lb + tarpon around Destin/Panama City/Apalachicola on fly.

I tried like hell to catch one on a fly while I was in Puerto Rico. Ultimately went to a live sardine on spinning gear and caught a big boy. As fun as that was, I still walked away with a slight tinge of disappointment since I couldn't get one on the fly.

I caught a 45lbs baby on an 8 weight in mexico about 15yrs ago.

Jumped 5 others. It was an amazing experience.
