re: 300 lbs of crawfish for party - Buy them boiled or boil ourselves?

Hire a crawfish man with all the equipment, I'm not sure where you are but there's a guy in Ruston who will travel for a price and cooks them good uns.

300 lbs is 9/10 sacks. It's not that bad depending on your boiling method.

Hit up LA Monsters They are based in Lafayette, but boil for events all over the state.

I'd lean towards the boil them myself route. Half the fun of crawfish is the boiling process.... sitting around shooting the bull, having drinks, etc.
But you better plan it out before hand to make sure you have plenty of supplies and make sure you give yourself more time than you think you need.

Just get yourself 4 pots and it won't be near as bad as you think it will be.

A buddy and I boiled a little more than 300 lbs. for a birthday party once. It was 12 sacks.

We ran 3 pots, boiled 2 rounds, dumped water and boiled another 2 rounds in all 3 pots. It wasn't a huge undertaking, and I like cooking them.

Hell, half the party stood around the cooking area most of the time.

As said, if you have a large crowd people usually eat less crawfish. Small parties is when the family posts up and goes to town. I'd tell the ladies to bring extra sides, and just do 3#s per person and do it yourself. Easiest for everyone imo.

9 sacks, that's PLENTY equipment, all you need is a couple buddies helping , probably can do 2 sacks in a pot i imagine

Is it worth the headache? Depends on the crowd yall expect, if his cowokers are cool and fun, I would boil them.

If 70 people are coming, 300 pounds is too much, I would settle in around 240 pounds. That is 8 sacks or so. I wouldnt see any problem at all running 8 sacks thru three pots in an afternoon.

Catered on site will cost your about 400 extra, you could put that to buying one of those cool stainless rigs that runs two sacks at a time.

I've done 150 lbs of crawfish and 150 lbs of shrimp in a single 120qt pot several times.

I've done 350 lbs of crawfish in 2 120qt pots.

I've never not had fun doing it.

also as always your arse is going to be sweating for a prolonged amount of time so even MOAR beer is needed to fuel. Yourself.

Yeah, we have 2-3 pots and burners. I just called a few places though and a particular place in Hammond currently has live for $1.75/lb and boiled for $1.99/lb. For that price we may just buy them boiled.

With 60 people and if you do them yourself your going to have 30 people telling you how to boil them. That's the worst part when you turn around someone is throwing in something u don't want in.. For example I always throw my corn and wennies in when I turn the pot off after I bring it back to a boil and so do most other people but you always have that one or two guys that "try to help" and throw it in with the potatos at the beginning

I own a rig/company that does this in NOLA. It is about $5 per pound. That includes everything.
