15 gal jambalaya pot

Pot is new but rough...sanded down some and reseasoned by burning of Crisco...season stuck well everywhere except the bottom...any thoughts or advice

Re-season the bottom but not at such high temp as you did before. It burned off. Try frying some chicken or something really oily. Heating it really hot with noting in it will just not allow seasoning to stick.

re season with flaxseed oil, expensive but worth it

No krazy kajun are not smooth, picked one up Thursday and spent Saturday standing and seasoning.
Hard to find smooth ones these days just about all of the pots come fromChina regardless of where ou buy them

I just put around a gallon of veggie oil and heated it up and kept coating it.
Didn't take any pics and only did one round because it was getting late

Gonna be doing a few batches of cracklins soon so tht is when it will really get seasoned

Go buy 3 gallons of oil and 4 or 5 whole chickens and fry them whole 1 or 2 at a time. It will season up real quick.

Get a 10 lb bag of potatoes and fry them up. The starches will season the pot.

I have one that was rough. Some may not agree with my tactics but I used a steel brush on a battery powered drill to smooth out some of the rough spots. Then just seasoned like normal. No problems since

I don't see anything wrong with that. A rough pot sucks. Sand it down however is easiest, wash it out good and reseason.
Unfortunately the the seasoning is where all kinds of folklore come in, and at one time I believed some pretty stupid parts of it too. Such as heating the oil until it caches on fire. This will only leave you with a stupid mess.

I have a 20 gallon pot that I seasoned and experienced the same thing. I basically seasoned the upper part of the pot and then focused on the bottom level. I am getting ready to sand mine down and reseason. Like others have said the pot is getting too hot on the bottom and is burning off the season.

flip it upside down on your burner, low heat, you will be looking at the bottom of the pot. let it heat up good and start basting the bottom with oil of choice. For the next 2 hours hit it every 10 to 15 minutes with you basting brush. let it cool all the way down and do it again tmrw. It'll be good then

What temp do y’all typically cook your meat for jambalaya....on high??? I wonder what is the temp when on high

Oven at 350. Wipe flaxseed oil on it. Bake until stops smokin. Repeat.
