I would never waste a steak by reheating it.

That's the ideal way, but I get home from work late and would like to earlier.

Wouldn't touch it. If you question it, toss it. Food poisoning isn't anything I'd want again. 3-4 hours is about my limit for leaving food out.

Important question might be what temp did you stop at?

I'm a medium rare man, so the steak in question was a little more rare. I could just end up having this one medium after a good reheat.

I mean, do what you feel best, but it's not cured, and if there's blood, I wouldn't.

Do not eat it. Bacterial growth is not halted at room temperature. If you didn't kill everything with heat (160 degrees) which rare isn't going to even get close to, then essentially your bacteria had many hours to grow. E. coli can reproduce approximately every 30 minutes, so the population of bacteria in your steak is doubling every half hour. Also, it only takes 6-10 E. coli O157:H7 cells to make you sick. Well, that's my my two cents, take them or shite your guts out. It's up to you.

Unless it tastes funky, I think it will be fine. I've had food poisoning twice and both times I was eating the food thinking, "This doesn't taste right."

"Do leftover foods need to be thoroughly reheated?

It is important that leftovers be refrigerated promptly after they are first cooked to prevent bacteria growth. Reheating to 165° gives an additional measure of safety in case there was bacteria growth during the cooling process."

Get that sucker up to 165 and you should be good. And those things always air on the side of caution anyway. I'd go microwave for added security...all them little suckers would be exploding like gremlins.

O157:H7 is the really bad strain of E. coli, it's the one that kills people and is found in raw and undercooked beef. The numbers have to do with the antigens for the endotoxins and flagella. It's a way to identify it from other less deadly E. coli.

I shitted uncontrollably out of both ends even after I had nothing left to surrender after eating some oysters I was given, putting faith in the guy I got them from and his safe handling. Never again, and if I have a question, I will play it safe. That is one awful feeling I never care to relive, and never worth it.

No. Microwaves heat food evenly.

Besides, would you really want to eat beef that has been microwaved?

If it means I can derive a little enjoyment out of it, and reduce the chance of 12 hrs of pukebutt, then yeah, I'd go for it microwaved. If I threw it back on the grill, sure it might taste better, but the mental anguish would diminish my pleasure.
