Why do waiters/waitresses overwhelmingly smoke?

Coming down Girod trying to get out of downtown tonight, and three of the waitstaff at Herbsaint are smoking outside the back door. One of these girls waited on me recently and is very cute. But these people smoke like chimneys, and it's everywhere.
What is it about food service that moves people into the OT trashy realm?

For the same reason that most of us aircraft maintainers smoke... We aren't the most educated bunch

They smoke just for the smoke breaks. Usually in the food industry you don't get any kind of real break, just enough time to sit down and eat if it's slow. So they compensate by taking a bunch of 5 minute smoke breaks throughout the day.

They make terrible life decisions obviously. Otherwise they wouldn't be working for less than minimum wage.

Hold the phone baw. A lot of back of the house smokes too. I know servers/bar tenders that pull 300 a night out of a restaurant.
