When I was a pro drinker me and a buddy went to a crowded bar. This cat walked up and ordered a few drinks and said put it on so and sos tab.... bartender makes his way to us, we ordered a couple drinks and put it on the same dudes tab. We drank for an hour or so on his tab and left.

It's easier in a packed bar for one person to order a round than for 5 different people to wait to get their order taken.
That's the only time I do it. It's more convenient/faster for the bartender.

The main lesson in large groups is to not be around when the tab is settled. Used to meet up after work, and over the course of 2-3 hours, 15-20 folks would cycle through - throwing some cash on the table when they'd leave. Check comes and you're always short.

It saves time. I hate people, mostly women, that order all their drinks on individual tabs. It occupies the bartender for entirely too long
