standard Cajun injector electric one. I'd love a green egg but they cost so much.

yikes gonna be some soggy skin, need to hit that at 325 to get that crisp skin

save the slow and low for brisket and pork butts

Went on at midnight. Will do 10 hrs at 200 degrees are so, then 1-2 hrs at 350 to crisp it up.

I just ate some smoked turkey. It was the best smoked turkey I've ever eaten, no shite. If I had to describe it i would say It was like Jesus and Jimi hendrix smoked a fat spliff and then played a sweet riff that shot rainbows and kittens and fields of grass out of the guitars while angels sang a chorus in the background.

Corkscrew BBQ on rayford in spring, tx. Go there.

I too cook it at 235. Low and slow, very juicy and not dry at all.
