Doesn't do anything at all actually, all he does is sleep, sit, and eat. They have two other dogs that are extremely active though lol.
Fat thing has a bad leg, had half his teeth infected so they had to pull it, heart murmur, and he has a few bumps on his tail and hind. Benign, but ain't a healthy dog for sure. lol

I'm not going pick out a random dog from a shelter. I'm going get a puppy bred from two dogs with histories of displaying traits that I deem desirable.
If the dog I get ends up not doing the job I want it to do I'm getting rid of it or having it put down. I'm going to get a puppy that I feel has the best chance of becoming exactly what I want. I've had horrible luck with getting already grown dogs and I will not do it again.

Meh, doesn't bother me when people breed their dog. I know lots of people with strong opinions on this and they can definitely go overboard as it sounds like your co-worker is doing.
If you have both dogs tested appropriately (CERF, OFA, etc...) and you're financially prepared to pay for appropriate diagnostics during pregnancy ( and an emergency c-section, if necessary,) I say go for it.
If nobody bred we wouldn't have any purebred dogs around. I usually get my dogs from breeders.

Yep, the OP's co-worker wouldn't have any dogs to choose from if not for guys like Mr. Downshift.

I am.
My dogs are extremely healthy, well mannered, and good at their jobs.
I've never sent one to the pound. I find somebody to take the ones I don't want if they're decent pets.

I don't doubt that for a second. Otherwise they're off to the pound (orsomeone else). I'd hate for you to stay committed to one if it didn't do "the job" you wanted it to

They all get a fair chance. I put a lot of time and money into having good dogs. Some just don't have the ability or intelligence to cut it. Someone else can feed them and I'm making room for the next one. You don't get good dogs by keeping ones that don't cut it.
Dogs get good at what they do through selective breeding and weeding out the bad ones. Adopting from a shelter is a good easy way to get a dog if you just want a friend, but if you want more than that you increase your odds by going out and finding the litter you want.
People who get mad at people for not "adopting" need to adjust their thinking. There's more to dogs than just being pets.

We got a dog from the wife's uncles neighbor lol. Mixed Dacshund and rat terrier. Great little dog.
Then one day cutting grass a brother and sister black lab/Bassett hound mix walked up on me and we kept them too. All three dogs were under 6mos when we took them in. I think it's key for an owner to get a dog young so they can develop into exactly what you want which ensures a long and happy and loving relationship.
