Take a helicopter ride from the Vegas airport, over the Hoover Dam, over Lake Meade, into and through the Grand Canyon, land for a picnic then back over the strip.

I would go check out downtown. I ended up not doing this when I went and regret it. We just walked down the strip and checked out all the different casinos.
