Bringing babies anywhere is just such a chore. Diarrhea explosion that squirts out the sides? Welp, got to find a place to change him. Hungry? Gotta stop and get some grub. Ruh roh. Carlos just pissed himself. Now, he's cranky because he wants a siesta.

Perot Museum
ETA: I was disappointed with the children's area though. My kids liked all of the regular stuff (but they were 4 and 6 at the time).
The Children's area, unless we missed something, didn't appear to cater to 1 year olds. Seemed to be more of a place for toddlers/kids to run around to burn off energy with things to do/see while doing so.

If I was you though, I'd just Uber to Katy Trail Icehouse and grab a table outside and drink all day though.

You could always drive to Arlington & hit up Hurricane Harbor.
When you & the misses wants to ride the big boy rides, just strap on some floaties to the baby, put him on a raft, & send him down the Lazy River firva while.
They have lifeguards, you know...

At 1 years old that baby cares about food, sleep, and diapers. However, you could visit places you want to see and take a few selfies of you guys as memories. Enjoy your time!

Put it on leash and take it to one of many dog park bars in that area.
Seriously though - Bluebonnets start to bloom and it's a Texas tyke right of passage to get a picture taken amongst the bluebonnets. They grow along the roads EVERYWHERE if you are going by car. TONS of people pull off and do it.
Lots of stuff to do downtown as far as museums and the aquarium go.
