GMC/Chevrolet are essentially the same vehicles and you'll be fine with either. The build quality of full-size trucks today is excellent.
Buy the right truck for your needs, for example if you only need to tow once a year, don't buy a truck outfitted for heavy towing, rent/borrow a truck for that single instance per year.
Same thing is true with bed size, engine and seating.

I have had 2 Silverado/Sierra models before my current Tundra. My 09 silverado had 4.8L V8 with 4-speed auto tranny, 18-21 mpg, but not great if you actually need to get up and go, really long gears. My 2012 LTZ 5.3L I just had was solid truck, comfort and got around 17-19 mpg. Now the one complaint, and main reason for getting Tundra, is GM does not have an aggressive throttle response, the transmission would have to 'think' what gear to downshift to before getting some power/torque to get up. Tundra has no problem with response/power when needed. My 2013 Tundra, before my current 2014 Tundra, had 4.6L, had more pickup/power than my 5.3L Silverado.
Just stay away from Ford & Dodge, and you will be fine. (My 2005 F150 was biggest POS, and I have owned 2 Chevrolet Cavaliers lmao)

Had an '11 Sierra Z71 crew cab. Beautiful truck but issues galore.
Interior was cheap and options were way behind the times in comparison to similar Ford trims. Plus, I had transmission issues around 70k miles, and little things like dashboard and radio lights were going out, which is something I've experienced in every GM vehicle I've had.
I got rid of it not too long ago in favor of a Tundra. I thought about getting a new body style Sierra, but the crazy amount of recalls and QC issues scared me away.
