I say it correctly. Bye-you.

However for some reason if it's a specific bayou, like Bayou Boeff, I just say Bye (with a faint hint of an "a" sound) Boeff.

don't you proclaim yourself French though? being French in south LA and pronouncing étouffée wrong is pretty sad

ay-too-fay is the proper pronunciation.

I've lived in La. my entire life, and never once, ever, heard anyone pronounce it anything other than buy you. Ever.
