I'm visiting family in Texas soon for a couple of weeks, and live in England. I have an unlocked iPhone and was wondering if any of you know the best way/provider to get a prepaid US sim for my trip?

Don't do this. Go to either Sprint, ATT, or T-Mobile and ask for a prepaid sim card. Your phone will work fine.
Don't go to Verizon, your phone will not take your sim card.
I did the exact opposite thing visiting the UK last year. So long as your phone is unlocked you should be good.

I just like the throw away phone when traveling is all.

Do you get any data with the prepaid sim or calls and texts only?

You can get a straightalk sim from Walmart for $15. After installing you have to go to the straightalk website (using Wifi) for instructions on updating APN settings. They recently made it so that they will send you a series of texts with the info and the location to paste the info.
You can probably get by with the $30 plan but the unlimited (throttled data after 5GB) plan is only $45.
ETA:
Or just go to AT&T if you want the warm and fuzzies but ST uses AT&T's towers.

Me too- until I got to Europe and realized I could use my phone to get around via Google maps and its public transit option in London, use yelp to look up restaurants, and call my family using my actual phone with the phone numbers already in it over skype. Made a huge difference not relying on WiFi only. All I needed was a new local sim card.
If I had just gotten a tracfone I wouldnt have had any of those options, and I would have had to manually add all the numbers I wanted to use. I would recommend doing that for anyone going overseas rather than paying out the arse to ATT.
