I ask because my Mom does IdealProtein and all her forum buddies raved about Quest Chips.

I like pounding it so it's really thin and it cooks fast and it rarely dries out. Make a quick marinade and if you add a very little lemon juice or lime juice it helps break down the meat. I used to do this on Sunday's and grill it up for the week. I should get back into this habit. hmmmmm.

Always go cast iron if you're using the stove. Nonstick pan chicken won't ever compare to the good crust you'll get on cast iron--even if you don't blacken.

i have to butterfly and pound a breast to get it thin enough to blacken, and even then i still have to put it in the oven to get to the right internal temp. and i can only do like 2 breasts before the house smells like char
