Chena Hot Springs Resort is a great place to watch the Aurora and do winter stuff.

Santa Fe could be a good choice. Ski, tubing at Hyde Park, children's museum. Good restaurants, cool shopping. Beautiful Christmas decorations.

Take them to Seattle and Portland, and check out Mt. Hood, Mt. Rainer, etc.

Big Bear. Looks like it is snowing for most of the week there. And then it's 65 degrees in LA just a couple of hours away. It'll blow their minds

If they just want to see snow and then not really go skiing (which is fine) then I'd do Tahoe/Truckee. At least then you can drive down the mountain and be in warmer climates before you fly back. (Reno, SF, Sac, Yosemite, visit an old deserted western town straight outta the movies, could probably still do white water rafting, etc)

Hell, you can take the California Zephyr (Amtrak) to or from Reno which is one hell of a scenic ride as it crosses the Sierras.
