I like Eggshell latex on the walls (durable and touches up OK). Satin can be a pain for touch up and highlighting drywall imperfections. To me, flat is not durable enough.

I like Latex flat on the ceiling. Any sheen on the ceiling highlights drywall imperfections that show up in the horizontal plane under lighting.

I like Oil Base Semi Gloss for the interior trim. Oil is a little more cleanup and fumes but it holds up so much better and flows to a smooth finish.

Best secret to trim paining either latex or semi gloss is to use a paint conditioner (Floetrol or Penetrol). A buddy of mine maxed out the Penetrol per the instructions and used a foam roller for his baseboards. It took a while to dry but it looks like a sprayed finish.
