I was in Pensacola this past weekend for the Blue Angels, the water was probably the nicest I've ever seen it there; I'd assume the conditions in Destin are pretty similar. It was damn cold though.
On a side note, the air show was fricking awesome. I'd definitely recommend planning a trip for next year's show, you'd better do it now though.

There last week. Awesome water. Got warmer as the week went on. Very refreshing water temps.
