I don't substitute it for rice! Gotta have rice. Just throw a scoop of potato salad on top. Carbload my friend.

I keep it in a separate bowl/plate and get a spoonful of it and then dip it into the gumbo

A bite with rice, tater salad, and juice is perfect.

Hard boiled eggs in gumbo is a decent replacement also.

I have an irrational fear of spoiled potato salad.

I will not eat it at a restaraunt.

I know the chances are low.
Yep. I'm really paranoid eating others' potato salad and tuna fish salad

Potato salad with gumbo is one of the GOAT combos

I didn't know this was a thing until a couple of years ago when I saw my cousin and uncle do it. It's actually a pretty fricking good combination. Wouldn't go out of my way for it, but I would recommend if it's available.

Some of my family also likes sweet potatoes in their gumbo

Not a huge fan of sweet potatoes in general though

Shouldn't be, one of the most common things to give food poisoning is raw onions.

Mayo is pretty safe.

This is a general population question. Food board opinion would be too skewed

No, not cooking it together. Dropping a scoop of the potato salad in your bowl.
