I did a lot of things there over the years but yes I bartended for about 2 years.

I'm not arguing this statement. It also isn't ripping people off if people are willing to pay for it. Plus I doun't typically eat steak when I go there because I can cook a steak at home just as easily.

Most rational people go to Sullivan's for the ambiance, drinks and Leo Verde, whose arguably the best restaurant manager in the state of Louisiana.

How does it not make sense? Sullivans offers a product and if people are willing to pay for that product they are not ripping anybody off. The prices are on the menu you can either choose to pay that or you can choose to go somewhere else

So you know exactly what Sullys pays for their meat? Because I do and it's a standard 30-33% food costs. Ripping off would be claiming it was prime and then actually serving choice. Sullivan's meat is top choice which is the top 20% of all beef (yes prime is higher but Sullivan's doesn't claim to be prime and there were many times in my years there that we actually would get prime beef in because of the way beef prices were at the time)

You are saying it is a rip off and my argument is that it is not a rip off. Again their food costs for meat is a standard 30-33%. If Sullivan's was claiming to be prime and then serving choice, then yes that is a rip off. But it is your prerogative to decide if something is a rip off to you, example i will give here is Beats by Dre when it first came out was charging $200 a pair but making them for under $10 (to me that is a rip off and overpriced so I never bought any). If you don't like the prices of a particular place, go elsewhere that is the point of a free market enterprise.

Also when you go to a "prime" steakhouse, you realize not all their beef is prime right?

Just making sure because you'd be surprised how many people go to said prime steakhouse for a filet (which outsells all the rest of the cuts by a lot) not realizing they are choice
