Get ready for them to offer you tea everywhere you go. Like random stores and other places while you shop. The apple tea is scrumptious. It is usually served in these tea glasses:

Yes. And be prepared for shop owners to hound you to come in to their business, especially restaurants. You gotta give them a firm, "no" and keep walking or they'll just keep at it. This was more prevalent around the tourist areas near the Sultan Ahmet neighborhood (where all the tourist attractions are located).

They are really pushy. And kind of creepy. As I found out, they offer grandmothers camels in exchange for their granddaughters.
And as I also found out, my grandmother was a fan of bargaining!

yea, gorgeous city.
The Hagia Sophia is amazing.
The Blue Mosque is really closeby so go stop in and see that as well. It is another beautiful building and pretty neat when it is prayer time.
The Topkapi Palace is another neat sight to see if you have the time. It is right next to the Hagia Sophia.
For a quick snack: grab some Turkish pizza, or some kokorec if you are feeling adventurous, and some fresh baklava for a quick dessert
I would also recommend walking through the Grand Bazaar. It is pretty cool to see some of the vendors effortlessly communicate/negotiate with just about every tourist in there switching from German to Turkish to English to French.

Yes, the salesmen are quite impressive. I am a tall blonde guy, and when walking past they would generally throw out "hello" in different languages, starting with English and moving to German, Russian, and Swedish as I didn't respond.

Did you do a private or group tour or did you just walk in and buy a ticket to each place?

but I was in Europe for 100+ days and had a goal of spending less that $5000 bucks including air/ground transport so getting a tour guide or group may be the better way to do it.

We did a group tour for the mosques and the palace. Then we walked around by the river and explored all over town.

Just walking, taking a ferry ride, and seeing the main tourist sites that people have mentioned (Blue Mosque, Topkapi, Hagia Sophia, Grand Bazaar, Dolmabache Palace) are great. When my family and I went we also enjoyed seeing the Sufi whirling at Galata Mevlevihanesi. The building and the ceremony are both beautiful.

Istanbul is a very cool city. Tons of history and great natural beauty. It is definitely worth a visit if you are in that part of the world. People have already listed some of the best sites:
Hagia Sophia
Blue Mosque
Topkapi Palace
Grand Bazaar
Basilica Cistern
I would also recommend:
Istikal street: this is a pedestrian street with lots of restaurants, bars, boutiques, etc
Explore some of the neighborhoods such as Besiktas and the ones on the Bosphorous strait (that name is slipping my mind right now)
Visit some of the other mosques like Suleymaniye
There is also a smaller spice bazaar. Not really necessary if you see the Grand Bazaar, but kind of cool to walk through
Galata Tower: This is an old stone tower that gives you a nice view of the city
