Yeah, Ted Kaczynski and Timothy Mcveigh do not create a pattern though, and never took down planes.
How many White, Black, Asian, Hispanic, Christian, Jewish, Hindus, or Buddhists have blown up a plane or taken it hostage at any point in time pre 9-11 or since? The overreaction is absurd, and almost as absurd as the public is for defending it as if it were a need in lieu of having a say so in who comes into this country in the first place, and in refusing entry to those who are from countries who buy into the Islamic garbage in the first place.
Our Gestapo airport security is but one example of how quickly Americans will accept their fate or even defend it when it's presented as a means of keeping them safe, the same can be said for guns in the Northeast and those who claim "it's for our own good and public safety." Cameras everywhere you look and our own government spying on its own citizens without warrants, and ALL for our own good and safety.
How does that quote go?

In all seriousness, contact the airline. I'm sure you have your receipt showing you purchased it on your trip. I hate to say it, but you'll probably have to be an a-hole about it, it seems that's the only way to get anywhere with customer service nowadays.
And seriously folks, opening an unopened iPad as a security measure? I supposed they should open every unopened souvenir you have in your checked baggage. I brought home two Disney snow globes from my honeymoon 7 years ago. I guess they should've broken the glass and drained the water to make sure it wasn't dangerous. Expecting a little common sense from people enforcing security is not unreasonable.

Great question. This was a business trip and the state I was in had no sales tax and I wanted to take advantage of it. If I bought it in my home state I'd've paid ~8.5%. Saved me about ~$45-50 bucks by buying it there.
