re: So how do we feel about our defense and Cam?

No one in the nfl is tackling well. This is one of the worst years in tackling we've seen. Attributed to the lockout and pussified practices with no tackling allowed. How the hell can these guys get better at wrapping up if you can only do it on gameday? Pathetic.
I've actually noticed our tackling improving a bit, except for Shanle. I blame it on account of his ninja turtleness. He has honor. Too much pizza. Nunchucks swing wildly.

Shanle wouldn't start for 31 other teams. Charles Grant 2.0.

I have no fricking idea how you even begin to make a comparison from shanle to grant.

Because Shanle was a high round draft pick who production has slipped due to his poor conditioning.

Eh, I think if it's in NOLA we win. Teams are evenly matched
As for Cam, I'll admit he's a big surprise to me. Seeing as we can't stop a passing attack, I expect he'll get yards and they'll score but they'll also turn it over 2-3 times more than we will so we should win by about 10-14.

I hope you guys decide to blitz Cam. He's at his best when being blitzed; just ask Green Bay & Arizona. Green Bay actually stopped blitzing as much at halftime and ran more zone, which confused Cam at first (3 INT's) but he rebounded.
The Bears also run a cover 2 and he torched them last week for 370+ yards.

That's a really lazy analysis and comparison.

I watched the Arizona game, and it was the exact opposite. They started having success once they brought the heat.
Can't say I watch the other games, but one thing I do know: Gregg Williams is a master of confusing rookie QB's.

ok, 90% of the time we win in a shootout.
and against a rookie QB that number goes up to %100

so, in other words, no matter what the saints do, cam will torch them

I don't love our defense against Cam, but I do love our O against their lack of D, so hopefully the team that scores the most points will be the winner, and that will more than likely be us.

Hopefully they torch us but we still beat them. I have him starting in my fantasy league this week because my QB is on bye...

Not really, no. It has to be a mix. Ideally the way to beat him is to get good pressure with your front 4 and blitz a safety or linebacker rather than just all-out blitzing.
If you blitz Cam heavily he'll get the ball out to Shockey or Olsen or just run up the middle for a good gain. Not to mention you run the risk of Steve Smith getting one-on-one, which is a mis-match against even a good corner.
The one game Cam was off in was against the Jaguars and that was more a result of him just being inaccurate for whatever reason. He was making the right decisions and would've had another big day if not for his accuracy being off - not to mention the monsoon that hit in the 2nd quarter - but he was off before that.
All in all I'd say the best approach is to get pressure with your front four and mix in some light blitzing to dial up the pressure in key situations. No doubt we're expecting you guys to blitz early and often and have a safety valve option on every play - likely Shockey and/or Olsen.
