I will also give a vote to Visions of Johanna.
That song is kind of difficult for me to sing and play because the inflections through the verses to the chorus, which gives me respect for how Dylan sings it.

When I Paint My Masterpiece is a great example of this (although the Glen Hansard live version is incredible.)
