This book looks really great, but I wonder how the songs are written out as far as chords, or sheet music?

I Googled a bit and found what you need: "The Bluegrass Hall of Fame" coffee table book that came out in 2015. Review at LINK
Buy it here: LINK
When I went to the Hall site it said "10% off with code BG10" so try that. Looks like Amazon has it too at about the same price.
Hell, I may get one myself.

The full-color coffee table book, which benefits the International Bluegrass Music Museum in Owensboro, KY, features detailed profiles on all members of the Bluegrass Hall of Fame, accompanied with (mostly) full color photographs, many of which are seen here for the first time.
Compiled by Fred Bartenstein, a noted bluegrass journalist, disc jockey, and historian, The Bluegrass Hall of Fame is truly a treasure for both lifelong fans of the genre and those who are newer to the fold.
