Hmmm... he has such a huge catalog, but I'd start with:
Freewheelin' Bob Dylan: classic folkie Dylan.
Bringing It All Back Home: Dylan plugs in
Blood On the Tracks: middle period, probably his best
Modern Times: late period Dylan

Honestly, what really got me into Dylan was listening to a compilation, of all things. I usually loathe and despise compilations and greatest hits because I feel like it removes songs from their original context and intended order.
The Essential Bob Dylan is a fantastic two-CD release that consists of material throughout the entirety of his career. All of the Essential releases are actually really well done. I enjoyed the Judas Priest and Stevie Ray Vaugh versions as well.
This is probably the best overview of his extensive body of work. From there, you can probably determine which of his styles you prefer the most.

Also look into Biograph if you can find it. It's a huge compilation that has a few rarities.

My dad had a friend who used to try to convince him of Bob Dylan's greatness. It never worked. My dad was like "He can't sing. All he does is talk in the songs. Now Pavarotti... THAT guy can sing!"

Blood On The Tracks is the most essential imo.
Shelter From The Storm contains many of the same songs but played electric with The Band.
Those two albums together show how different the same song can be. Bob Dylan took a lot of heat from the Folk community for plugging in.
He also took a ton of heat for making an "alt country" album, Nashville Skyline. But as soon as he did most other acts including The Rolling Stones soon followed suit.
Hwy 61 is a must.
