Up and until 1994 it was Star Wars/ Bill and Ted’s Excellent Adventure.
Then it was and maybe still is Tombstone.
Pulp Fiction is slowly edging its way into that spot with Tombstone, as I love all QT movies. But to answer the question for today, it would be ONCE UPON A TIME IN HOLLYWOOD. It’s because of the entire movie immerses you into 1969.
Hon Mentions: Godfather 1 & 2, It’s a Wonderful Life, The Natural, Interstellar, and Smokey and the Bandit.

my #2 can move from Jaws to Interstellar to Jurassic Park to Raiders to Crazy Stupid Love to Good Will Hunting to Casablanca to etc. depending on the the mood, but IAWL will always be the pinnacle of what movie making and inspiration SHOULD be.
