I would like a detailed series on how the children of the forest addressed the first men when they were migrating into Westeros. Their initial conflicts, and eventual pact between the two.

There are bits and pieces throughout the series. In terms of quantity the first book gives the most but a lot of that is contradicted in later books and still not entirely resolved. Martin loves the unreliable narrator.

I would like to see a show about colonizing Southoros, the unknown continent, or voyaging and trading in far off lands like Asshai.

You could have all kind of conflict with competing houses and factions in the "New World." It would be cool.
