Which actor/actress have you been extremely impressed with in the way they can totally change their look?
For me it is Gary Oldman.
Harry Potter and the Deathly Hallows Part 2 (2011):
Darkest Hour (2017):

Oldman is great. To me he is still the best on screen dracula.
I think McConaughey could push it more than he already does.
Bryan Cranston is great too.

So how did they make Evans look so weak and emaciated? "They came up with a technique that is pretty amazing. For the most part anytime my character is moving it is me," Evans revealed. "They just shrank me down. If ever I'm sitting or laying down and there is no motion it's head replacement, they put my head on a skinnier body."

Oldman did this for fully 1/3, if not 1/2 of his better known roles - Drexyl in True Romance, Zorg in Fifth Element.
Sam Rockwell can do this to varying degrees, as well, although with more subtlety.
I'll toss out a television guy - Michael Chiklis -
The Commish - 1991 to 1996
The Shield - 2002 to 2008

They did Lem wrong, man.

It’s crazy how Chiklis went from flabby in The Commish to rock solid muscle in Fantastic 4

Gary Oldman has been through many great physical transformations for various roles. Check him out as Drexel in True Romance.
His dialog combined with his appearance make him unrecognizable in the movie.

Truly amazing. I sat in the audience and I was like "Woah! Where did he go? Who's this other guy."
Chameleon.
