Putting them in the oven?
Here's what I do with ducks. Stuff them with whole garlic cloves and a piece of smoked sausage. Cook down a pack of bacon in a black pot. Pull out the bacon and have a snack. Hit that bacon grease with a little sugar and throw the ducks in to brown in the grease. Usually put some fresh sausage in there too. Makes a hell of a gravy

Since we're on the topic of bacon..ever done sugar bacon? Basically a pack of bacon spread out over a cookie sheet covered in brown sugar, baked off until the bacon is crisp.
