Why doesn't LSU honor the 1908 football team by recognizing the NC?

Because Bama?
This team went undefeated and outscored opponents 444 to 11, I think. I'm talking about one of the more dominant football teams ever. Some people think looking back like this is cheesy, but I think it's really cool that LSU was that good in the leather helmet days. I know other SEC schools retroactively claim shady titles and they are rightly mocked for it, but this is one that should have been recognized from the get go. I wish they would make it right.

I'd like to think that we're classier than bama, auburn, and atm, but if not, put it up there

LSU played a weak schedule. The concentration of football power was in the east and LSU didn't play those teams. Harvard and Penn were also undefeated vs much tougher competition.

There was a lot of smoke around that team concerning paid players and such. Not really something the university was ever proud of.

They were cleared of all wrongdoing (twice).
The main reason that LSU probably doesn't claim that title is that it was retroactively awarded decades later--generally teams only claim titles that were awarded at the time the team existed (e.g., with a physical trophy presented, etc.).

All the NCs from those years were awarded years later. There wasn't a real champion until 1930. Hell Bama claims a championship that was awarded by a math formula years later that nobody recognized.
