Burrow, Daniels, Cannon are obvious picks, but for "exciting" I'd add:
Todd Kinchen - check out his highlights
Cecil Collins - short-lived but channeled Herschel at times
Dalton Hilliard, whose upper & lower bodies went in different directions
Honorable mention to Steve Rehage - I used to focus on him on special teams; definition of "reckless abandon"

but I've seen the Cannon run against Ole Miss that is famous, but if I am honest, he looks slow in that footage, JD5 would smile as he's passing Cannon down that sideline...

I just watched it on SEC Clips, and the other thing to note about that runback was that he didn't break free on pure speed. He broke tackles at least 4 times: at the 20, 26, 35, and 45 yd lines. Those weren't just jukes where the defender missed, they were good contact on all 4. He drags one guy about 5 yds to the 30, takes a stride and then cuts, with the next guy trying to wrap up his ankles.
Cannon's run isn't like Peterson/Kennison speed, it's more like Guice in the open field, weaving through the crowd with moves and power.
