Honest question about the Committee and the Playoff process

Are all polls removed from their decision? Is it really an eyeball test that they can say "well if SO and SO hadn't been hurt, ______ team would have won".
I guess I'm just wondering how this is any better than hard facts about SOS, win/losses/etc.
Not complaining by any means, just trying to understand how this is any better.
