I graduated in the 90's, but for me it's Tony Moss.
the guy was like skylar green and peter warrick all rolled into one
eta: cecil would be the best, but I'm hesitant to give him the honor on account of his stupidity

Offense has to be Faulk. It just also seemed like whenever he had the ball, he could make anything happen. Was it the Houston game where he almost single handedly willed us to victory?
On Defense, I have to say Honey Badger. He just had another level when it came to play making ability. Always seemed to be in the right place at the right time.
Honorables would be PP7. I watched his return against WVU, and was about 30 feet away from him when he struck his heisman pose. A couple more, Dorsey, guy was a beast and anchored the interior DLine, injured and all. Trindon would be another O guy. He seemed to make things happen when we needed a break.

Offense:
Tommy Hodson
Dalton Hilliard
Sammy Martin
Eric Martin
Wendell Davis
Harvey Williams (if not for a bad knee injury in '87, would've been the best ever at LSU, IMHO. Dude was amazing)
Tony Moss (dude was electric)
Defense:
Eric Hill
Michael Brooks
Chris Carrier
Greg Jackson
Ron Sancho
Henry Thomas
Leonard Marshall
My all-time favorite class of Tigers was the '84-'87 group
