Aside from the best offense ever in CFB, that defense was stacked on LSU compared to these scrubs.

The goal line stops vs. Texas were huge for LSU because it allowed them to hang in until the offense got rolling. Same for FSU. However, the difference is even with the goal line failures Texas's offense still got rolling in the second half to match (actually best) LSU. The reason that 3rd and 17 conversion was so huge is because deep down we all knew in the moment as LSU that if LSU didn't convert it was VERY unlikely LSU's defense was going to keep Texas from scoring and taking the lead.
Unlike Texas in 2019, LSU's offense never caught fire in the second half. So all things being equal, even if LSU had gotten, say, 10 points out of the failed opportunities in the first half it's still likely FSU would have caught and passed LSU in the second half. The only thing that would have been different was the margin of victory.

Yup. Defense in the 2nd half of both games was cooked.
