Outdoor Kitchen Build - Hood Vent

I am designing my outdoor kitchen right now. To keep it short, I am planning on having a Primo XL and a 32" or so built in griddle.

Does the griddle really need to be under the vent? The Primo XL is about 28" wide, add in the griddle and a little space and I am over 60" of cooking area. Hoods aren't cheap and being a smaller type kitchen, it would probably look weird with such a large hood.

Never had a griddle before, but is it really necessary or should I focus on a nice one for the Primo?

No it does not. But the benefit to be able to vent greasy water vapor smoke away from the underside of your kitchen is something to consider.

But the old saying applies, buy once, cry once. If you have the funds in your budget, opt for the purchase now.

Also, something to consider during this build process - you may need a wall extension for the hood as well so that the hood opening sits mostly / directly above the griddle and smoker versus offset / slightly behind them.

Just curious as to why you went with a Primo over others? I was shopping, and seriously considering the Big Joe 2.

I'd get it all under the hood if you can. Oh and make sure your hood isn't low enough to smack your head on it all the time.
