Do I have to wait for games to download before I play them? Wtf is the point of the disk?

A lot of the games have to be installed. Data is read from the hard drive much faster than the disc. Lots of games rely on that speed difference to function.

So if I were to get my sons an XBOX one. it would be best not to get the game disc and just order and download? Right? Therefore, they will never loose or scratch disc.

There's pros and cons to both.
Disc: You can share the disc with others, sell it back to game stop, usually quicker to get the game installed versus downloading
Download: can preload games before they launch and don't need the disc inside to play it.

I'd get the 1 TB. That space goes quickly... You could always add an external storage later though
