Don't worry, eventually you can shank his arse. It's not obvious how though...so make sure you're talking to EVERY NPC and paying attention to what they say. Which is actually pretty important through the entire game.
ETA: I'm also finding it much easier to play with a keyboard and mouse due to the timing required for deflects/counters. It's just so much faster for me using my mouse.

beat the boss at the top of Ashina castle and it really feels like everything is clicking right now. smacked the last few minibosses ive faced

Yeah game is every bit as good as Bloodborne is. I only prefer BB due to the art style and world of it, but any weebs are gonna prefer Sekiro.
From what I read and from my own testing, it's not using the resurrect power that causes Dragon Rot, it's dying for good, that is, respawning at an idol. In other words if you die, and use resurrect power and manage to get away or win the battle, and then later rest, that causes no rot.
Dying and choosing to die instead of using available resurrection does not save you rot, quite the opposite, it just ensures you get it. I was doing that briefly because I thought it was a good way to avoid rot but I got it just the same doing this.
Has it been confirmed that NPC's actually die if they remain rotted? I have sometimes had it active on a large number them for quite some time and nobody died yet. I do cleanse the rot periodically just in case because I have plenty of droplets, but if they do die, they are pretty lenient about it as best I can tell.

correct
i'm doing a no-resurrection run for my first run since I thought it would spare me the dragonrot. pretty stupid to do it the way they did it. there should be consequences for resurrection. as it stands, there is no real penalty for doing it. nonetheless, im still gonna beat it without resurrecting.

they cannot die. you just can't continue their questlines while they are afflicted. i haven't cleansed the rot at all yet.

On Genichiro Ashina trying to learn the fight. Coming from Nioh has help me learn to be more aggressive/parries with this game.

he's the best fight of the game for me thus far. once you learn his moves, it's a lot of fun. first phase will get faster and faster as you learn how to abuse him
